  • 2 medium onions, quartered
  • 4 tomatoes, chopped OR 1 tin
  • 2 peppers, chunked
  • 3-4tbsp olive oil
  • herbs
  • salt and pepper

Preparation

Step 1

Add everything to a roasting tin and mix well.

Step 2

Cook in oven at 220C for 15mins, then turn oven down to 180C for 15-20mins
