Roast Pork in honey with fresh Figs

- 1 pork roast
- onion
- olive oil
- 6 fresh figs
- 1 handful of sultanas
- honey
- 1 small glass of strong red wine
- 1 stock cube
- thyme

Step 1
Brown the roast in a cast iron pan with a tablespoon of olive oil and set aside. Chop the onion finely and fry until golden. Add the wine. After evaporation, add half the stock cube and a glass of water. Coat the roast in honey with a brush and place it in the casserole. Add the figs, halved, the handful of sultanas, a little thyme, salt, pepper and two glasses of water. Simmer for about 45 minutes. Carve and serve with white rice flavoured with thyme.
