Quick Pea & Mint Soup

A super quick soup made with frozen peas, enhanced greatly by a secret ingredient!
- 1/2 tablsp olive oil
- 1medium onion
- 1 or 2 Bay leaves
- 450g frozen peas
- 2tbsps chopped fresh mint
- Grated rind of 1 lime (keeps green flavour)
- 1 tbsp of fromage frais or similar
- 1.2L water and chicken or vegetable stock (not beef)
