Toad in the Hole

This recipe has never ever failed to rise. Make sure to move the shelf down in your oven, it rises A LOT and can burn on the top of the oven.

- 70 g plain flour
- 100 ml milk
- 2 eggs
- 4 sausages
- 1/2 tbsp oil

Preparation
Step 1
Preheat the oven to gas mark 7.
Step 2
Make the batter by placing the flour into a mixing bowl with a pinch of salt. Add the eggs and then whisk in the milk. Mix until the batter is smooth and has the consistency of double cream.
Step 3
In a roasting dish put the oil and the sausages and bake for 12 - 15 minutes.
Step 4
Just before the sausages are ready give the batter a final mix. Remove the tray from the oven and quickly add the batter before putting it back in the oven quickly. The batter should sizzle when it hits the oil. Do this as quick as possible for the best results.
Step 5
Cook for 35-40 minutes until the batter is well risen and crispy. Serve and enjoy!
