Pasta with sweet potato and sage

  • 1-2 sweet potatoes: Peeled and cut into chunks
  • 3 tbsps olive oil
  • Papardelle or tagliatelle
  • Seasoning:
  • Sage
  • Basil
  • Salt
  • Pepper

Step 1

Heat the oven to 200C.

Step 2

Place the sweet potato chunks in a roasting tray and drizzle with olive oil. Season with salt, pepper and basil, and roast for about 30 minutes.

Step 3

Cook the pasta according to package instructions.

Step 4

When pasta is ready, drain from water and return to the pot.

Step 5

Add the remainder of the olive oil and the sweet potatoes from the roasting tray to the pot.

Step 6

Mix everything thoroughly

Step 7

Serve with the parmesan sprinkled over the pasta.
