- 1 large sweet potato
- 3 spring onions
- 25g self raising flour
- 1 egg
- 30 ml semi skimmed milk
- sprinkle of chilli flakes
- salt
- pepper
- olive oil for frying

Preparation
Step 1
Peel the sweet potato and dice into 2cm squares
Par boil in a pan of water
Chop the spring onions finely
Combine spring onions with beaten egg and milk
Drain the sweet potato and mash (with a bit of butter if you want)
Combine potato with milk mix and add the chilli, plus salt and pepper to taste
Add the flour and this should form a dough
Shape into small rounds and flatten
Fry for about 3 minutes on either side, flattening as you go if needed, until golden brown
