Gnocchi and Tomato Bake

It's a nice change to pasta or potatoes and is available in most supermarkets. Gnocchi is awesome!
Ingredients
- olive oil
- 1/2 onion, chopped
- 1/2 red pepper, deseeded and finely chopped
- 1/2 garlic clove, crushed
- 200 g can of chopped tomatoes
- 250 g pack of gnocchi
- handful of basil leaves, torn
- 35 g mozzarella, torn into chunks

Preparation
Step 1
Preheat the grill to high. Heat the oil in a large frying pan and then soften the onion and pepper for 5 minutes. Stir in the garlic and fry for 1 minute.
Step 2
Tip in the tomatoes and gnocchi and bring to a simmer. Bubble for 10-15 minutes, stirring occasionally, until the sauce has thickened. Stir in the basil and then transfer into an ovenproof dish.
Step 3
Scatter with the mozzarella and grill for 5-6 minutes until the cheese is bubbling and golden.
Step 4
Serve and enjoy!
