  • Pack of fresh Gnocchi
  • Olive oil
  • 2 Chicken Breasts
  • 1 Onion
  • Garlic
  • Chopped Tomatoes
  • Mozzarella
  • Basil
  • Rosemary
  • Pepper

Preparation

Step 1

Heat up some oil in a pan andd add the garlic. After a few minutes add the chicken and cook until gently golden. After about five mins add the chopped onion.

Step 2

Add the Gnocchi to a pan and add a dash of olive oil and water ad bring to the boil - cooking according to insturctions on the packet.

Step 3

Having let the onion soften reduce the heat and add the chopped tomatoes, the chopped fresh basil and the rosemary and allow to simmer until the chicken is throughly cooked and mix in the gnocchi

Step 4

When the chicken is cooked transfer the contents of the pan into an oven proof dish and add the chopped mozzarella and allow to bake under a hot grill for 5 minutes or so until the cheese has melted. Served on it's own its lovely but it's also great with a salad or garlic bread.

Adding green beans and broccoli or peppers and hint of chili make lovely additions to this dish.
