- 3/4 cup butter
- 1 1/2 cup self raising flour
- 3/4 cup caster sugar
- 3 eggs
- 3 lemons

Step 1
Zest and juice the lemons.
Step 2
Beat together all other ingredients with the zest and half the lemon juice.
Step 3
Bake in loaf tin at 180 c for 40 mins, covering with foil after 20 mins.
Step 4
After cake has cooled, pour remaining lemon juice over cake.
