Stewed Rhubarb with Almonds

Delicious fruity dessert when rhubarb is in season - serve hot or cold with ice cream or yogurt (low fat if preferred).

- 4 sticks fresh rhubarb
- 50g butter
- 50g raw brown sugar
- 50g ground almonds

Step 1
Wash rhubarb thoroughly. slice or cut into small chunks. Melt butter in heavy saucepan, add rhubarb & sugar. Cover saucepan with tight fitting lid, stew gently, stirring once (10-15 mins) No water is required.
Step 2
When stewed to desired consistency, cool a little & stir in almonds. Serve warm with ice cream, custard or a combination of these or cool completely, chill in fridge and serve with ice cream or yogurt.
For attractive presentation, cover ice cream with toasted flaked almonds. For an alternative flavour, stir in 1/2 teasp. ground ginger or cinnamon when hot.
