Step 1
Boil the milk and melt in the butter. Let the mixture cool to room temperature.
In a large bowl, dissolve the yeast in warm water with 1 tablespoon of white sugar. Set aside until you have a creamy consistency that begins to bubble, it takes about 10 minutes. Now add the cooled milk mixture. Add the beaten eggs. Stir in the remaining sugar, salt and nutmeg.
Step 2
Add gradually, in three stages, the flour. Knead until a smooth and elastic dough, about 8 to 10 minutes. Cover with a damp cloth or cling film and leave to rise in a warm place until it has doubled in volume, about 2 hours.
When the dough has risen, knead it again. Preheat the oven to 180 ° C. Cover a baking tray with greaseproof paper. Roll the dough to form a large rectangle.
Step 3
Prepare the filling: Combine the sugar, cinnamon, nuts, ground almonds and flour. Add the butter at room temperature, previously cut into small pieces. Knead with your fingertips like preparing a crumble.
Step 4
Sprinkle the filling evenly over the dough. Place in a lucky charm or penny, then fold the dough over the filling, lengthwise. Bring the ends round, forming an oval ring.
Place the ring on the baking tray and leave to rise in a warm place until doubled in size, about 45 minutes. Brush the ring with milk and sprinkle with pearl sugar before baking for 30 minutes.
