Ingredients

  • 1 1/4 lb plain flour
  • 1 lb sultanas
  • 1 lb currants
  • 1 lb soft brown sugar
  • 3/4 lb butter
  • 1/2 pint stout
  • 1/2 lb mixed peel
  • 4 eggs
  • rind of 1 lemon
  • 1 tsp spice
  • 1 tsp bi-carbonate of soda
  • 1/2 lb chopped or ground almonds (optional)

Preparation

Step 1

Cream butter through flour.

Step 2

Mix in all fruit, sugar, spice and lemon rind, then the eggs.

Step 3

Heat the stout and put soda into it just before adding it to the other ingredients.

Step 4

Beat together for 20 minutes.

Step 5

Bake for two hours.
