- 1 1/4 lb plain flour
- 1 lb sultanas
- 1 lb currants
- 1 lb soft brown sugar
- 3/4 lb butter
- 1/2 pint stout
- 1/2 lb mixed peel
- 4 eggs
- rind of 1 lemon
- 1 tsp spice
- 1 tsp bi-carbonate of soda
- 1/2 lb chopped or ground almonds (optional)
Christmas pudding

Mix the flour, baking powder, bread crumbs, butter, salt and brown sugar in a bowl
- 150g flour
- 150g breadcrumbs
- 200g butter
- 150g of brown sugar
- 150ml of milk
- 4 eggs
- 500g raisins, soaked and drained (Smyrna, Corinth and Malaya)
- 300g candied fruit (cherries and lemon zest, grapefruit and orange)
- 12 chopped prunes
- 60g chopped almonds
- 1/2 grated nutmeg
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1 pinch of salt
- 1 sachet of baking powder
- cognac or brandy
Homemade Chocolate Candy Bars

- - 2 bars of dark chocolate (min 70% of cocoa)
- - 1 packet of gorp (dried fruit and nuts)

- 175 g currants
- 70 g dried figs, chopped

- 45 g glacé cherries, halved

- 100 ml brandy
- 50 g stem ginger, chopped + 2 tbsp of their syrup
- 1 apple, grated
- Juice + zest 1 orange
- 3 large eggs, beaten
- 125 g shredded suet
- 125 g fresh, white breadcrumbs
- 175 g light muscovado sugar
- 90 g self-raising flour
- 1/2 tsp mixed spice

- 100g butter, melted
- 2 tbsp demerara sugar
