My mum passed this down to me which she inherited from her mother-in-law. There isn't any alcohol in but its really yummy...especially with cheese.
I use a huge stoneware mixing bowl & my hand for these as their is loads of mixture in 4 cakes.

Ingredients

  • 2lb s/r flour
  • 1lb 6oz sugar
  • 1lb 8oz currants
  • 1lb sultanas
  • 1lb margarine
  • 4oz lard
  • 4oz ground almonds
  • 4oz chopped glace cherries
  • 10 eggs
  • 1 egg cup vinegar
  • a little milk if needed

Preparation

Step 1

Line 4 loaf tins with greaseproof paper.

Step 2

Weigh out all ingredients first, as they need to be added gradually.

Step 3

Using a very large mixing bowl and your hand as sheer strength is needed, beat the margarine, sugar & lard to a creamy consistency.

Step 4

Mix in the eggs.

Step 5

Working through the other ingredients, add a little at a time, mixing constantly. Use a little milk if needed to form a thick dropping consistency.

Step 6

When everything has been thoroughly combined, scoop equally into the 4 loaf tins.

Step 7

Cook on gas mk2/150 degrees c in the centre of the oven for approximately 3 hours but check after 1.5 hours & then every half hour after.
