bread and butter pudding

  • 50g butter
  • 10 slices of bread
  • handful raisins
  • 400ml whole milk
  • 50ml double cream
  • 2 free range eggs
  • 50g brown sugar
  • nutmeg

Step 1

grease a pie dish or bread pan

Step 2

cut the crusts of the bread and cut diagonally in half to make triangles

Step 3

butter bread and layer in pan, butter side up, then a layer of raisins and continue until all raisins and bread is used up

Step 4

heat milk and cream in a pan gently but don't boil

Step 5

whisk 3/4 sugar and eggs in bowl then add warm milk and cream mixture

Step 6

pour on top of bread and sprinkle on remaining sugar

Step 7

cook at gas 4 for 30 mins or until set on top
