- 6 large carrots
- 1 tbsp caster sugar
- 1 tbsp lemon juice
- 2 tbsp fresh coriander
- 1/2 tsp chilli flakes
- 1/2 tsp paprika
- 2 tbsp olive oil
- rock salt

Step 1
Peel the carrots and chop into batons
Boil in a pan of water until al dente
Drain and pat dry with a paper towel
Combine all other ingredients into the hot pan and heat
Add the carrots and toss
Turn the heat up for a couple of minutes until the carrots are glazed
Serve hot or cold in a buffet
