Banana Maple Cupcakes

This is an adaptation of the vanilla cupcakes and it ridiculously more-ish.
Ingredients
- 125 butter
- 125 g caster sugar
- 2 eggs
- 1/2 tsp vanilla extract
- 155 g self-raising flour
- 1 ripe banana, mashed
- 50 g pecans, chopped
- 145 g icing sugar
- 85 g unsalted butter
- 2 tbsps maple syrup
- 1 tbsp milk

Preparation
Step 1
Preheat the oven to gas mark 5. Line a cupcake tray with cases.
Step 2
Beat the butter and sugar together until pale and fluffy. Beat in the eggs and vanilla extract and then fold in the flour, banana and pecans.
Step 3
Divide between the cupcake cases and bake for 15-20 minutes until golden. Leave to cool in the tray for 5 minutes and then remove and cool on a cooling rack.
Step 4
Whilst the cakes are cooling mix the icing sugar, unsalted butter and maple syrup together with the milk to create a smooth icing. Spread over the cakes and then serve and enjoy!
