(Very Crumbly) Ginger Cake

A ginger cake much like the McVities Jamaican Ginger Cake.
Ingredients
- 8oz Self-Raising Flour
- 1 tsp Bicarbonate of Soda
- 1-2 tbsp Ground Ginger
- 1 tsp Ground Cinnamon
- 4oz Butter
- 4oz Black Treacle
- 4oz Golden Syrup
- 4oz Dark Brown Muscovado Sugar
- 265ml Milk
- 1 Egg

Preparation
Step 1
Heat oven to 180°C.
Sift the flour, bicarbonate of soda, ginger, cinnamon, together in a bowl.
Step 2
Add the butter to the bowl and rub together to get a crumble-like mixture.
Step 3
Heat the treacle and golden syrup together into a pan until melted and runny, take off heat.
Step 4
Heat the sugar and milk in another pan until the sugar has dissolved, take off heat.
Step 5
Pour the milk mixture into the bowl, then the treacle and golden syrup and the egg. Whisk until thick and smooth.
Season with ginger to taste and add mixed spice/nutmeg for a slightly different taste.
