Heat griddle pan until very hot
- 2 x 8oz sirloin steaks
- 1 tablespoon rosemary (chopped)
- 1 tablespoon flat leaf parsley (chopped)

- 2 red chillies (finely chopped)
- 1 garlic clove (crushed with a little sea salt)
- 1 teaspoon red wine vinegar

- 25g/1oz parmesan, finely grated
- 3 medium vine tomatoes, sliced
- freshly ground black pepper
