Preparation
Step 1
Combine your minced meats and zests in a blender and combine with all of your dried ingredients, this can be done in a bowl but make sure you obtain a fine mush. Feel free to squeeze a little of the fruit juice into the mixture for additional zing.
Step 2
Spread a thin layer of the mixture onto a baking tray with a spatula, ensuring you have 1cm wide strips with 1cm gaps between the jerky, place in the fridge for 24 hours uncovered to marinate and dry.
Step 3
Sprinkle the strips lightly with clove infused oil and sprinkle with salt, feel free to add additional flavourings.
Step 4
Place the jerky into an oven set at 85 degrees to dry out the meat and kill any bacteria that may be present. Dry for 2 hours, if the product isnt suitably crisp continue the process checking back until dried.
Step 5
Place the product once prepared into the freezer for an additional drying process, once frozen transfer into an airtight container and either refridgerate or freeze for later consumption.
