Parmesan and Paprika Turkey Escalopes

Ingredients
- 6 turkey escallops/breast fillets
- 2 slices of white bread – blitzed into fine breadcrumbs
- 1 teaspoon smoked paprika
- 87g parmesan cheese, finely grated
- 1 large egg white
- 2 tablespoon olive oil

Preparation
Step 1
Lightly press/roll out the turkey breast steaks between cling film to approx 1 cm thickness
Step 2
Mix the paprika, breadcrumbs and parmesan in a shallow dish
Step 3
Lightly whisk the egg white in another shallow dish
Step 4
Dip the turkey into the egg and then press into the breadcrumb mix, thoroughly coating each piece on both sides
Step 5
Heat the olive oil in a frying pan over a high heat. Cook the turkey for a couple of minutes on each side, until golden and crisp
Works with chicken too. For an alternative to breadcrumbs mix polenta with the paprika and parmesan
