Slow Cooker Turkey Casserole

A low fat, budget friendly and easy to cook slow cooker recipe which will fill the house with aromas when you walk in the door!

Ingredients
- 2 turkey legs, skin removed
- 1/2 swede, peeled and chopped
- 1/2 butternut squash, peeled and chopped
- 1 sweet potato, peeled and chopped
- 4 carrots, peeled and chopped
- 1 onion, sliced
- 500ml (17 fl oz) chicken stock
- 2 cloves garlic
- 1/2 teaspoonful marjoram
- Cornflour to thicken

Preparation
Step 1
1. Add all ingredients except cornflour to slow cooker and cook on low for around 8 hours (a little longer will be fine)
Step 2
2. Pour off sauce and reduce in a pan, adding cornflour to thicken.
Step 3
3. Serve with boiled rice.
There should be plenty of meat left to have cold the next day - lovely with mango chutney, low fat mayonnaise, a little curry powder and raisins to make a Coronation Turkey sandwich filling.
