Beef and Guinness Stew

Ingredients

  • 2 lb lean stewing beef
  • 2 tblsp vegetable oil
  • 3 Chopped Carrots
  • 2-3 sticks of Celery Chopped
  • 300g Roughly Chopped Mushrooms
  • 2 garlic cloves (chopped)
  • 2 Stock Cubes
  • 1 large can of Guinness
  • 2-3 tblsp flour
  • extra oil

Preparation

Step 1

Heat the oil in a pan on high.
Sweat onions and garlic and add the beef.
Brown in the saucepan.
Add the carrots and celery to the pot and cook for 2-3 minutes.
Add the stock cubes
Slowly add the Guinness and bring to a simmer, add some water if the guinness doesnt just cover everything, cook for an hour. Then add the mushrooms
Allow to simmer away gently until the beef is cooked, about another hour to an hour and a half.
Add the flour and extra oil together to make a roux
Add a little bit at a time to the stew, making sure to stir in well to prevent lumps.

Serve with really creamy mash.
