Step 1
Clean the octopus: Check the ink sac of the octopus has been removed. Soak with coarse salt and a little vinegar and rub it between your hands to remove any slimy substance. Rinse and cut into small pieces about 2 cm. Some people boil the octopus briefly in water to get rid of the grayish skin.
Step 2
Making the stew: Place the well drained slices of octopus in a large pot with the finely chopped onions, garlic, finely chopped ginger, chopped tomatoes, spices and oil. Add a leaf of allspice or ravensara oil as well as thyme. Do not add salt.
Heat to a simmer and cover. Leave to reduce completely and add the wine. Reduce again until the stew crusts slightly. Sprinkle with chopped parsley and finely chopped spring onions.
