Step 1
Prepare the court-bouillon and bring it to boil. Put the slipper lobsters in the pot and cook them in the simmering water for 8 to 10 min.
Step 2
Drain the slipper lobsters and tie them. Allow to cool.
Step 3
If crustaceans are small, cut them in half lengthwise. Otherwise, remove the tail, cut into medallions and split the head in two.
Step 4
Enjoy with a good homemade mayonnaise.
