Velveting the chicken: Slice the chicken into bite-size pieces
- 4 skinless boneless chicken breast fillets
- 1 egg white
- 1 tbsp cornflour, plus 1 tsp extra
- 350g fragrant Thai rice
- thumb sized knob of root ginger
- 1 red pepper
- 1 shallot
- 1 garlic clove
- 1 red chilli (optional)
- 1 tbsp vegetable oil
- 1 tbsp fish sauce
- juice 1 lime
- handful basil leaves

- splash of sesame oil
- 3 shallots, peeled and cut into quarters
- 225 g cooked chicken, cubed
- 1 1/2 tbsps soy sauce

- 85 g (3 oz) peas
- 50 g canned sweetcorn, drained

- 200 g ramen noodles
- 1/2 onion, finely sliced
- 100 g beansprouts
- 1/2 red pepper, deseeded and sliced
- 75 g chicken, cooked and sliced
- 6 cooked prawns

- 1/4 tbsp mirin
- 1/2 tsp sesame oil

This is ridiculously filling
- 2 x 150 g packs of ready-to-wok udon noodles
- 1 leek, shredded
- 200 g beansprouts
- 8 shiitake mushrooms, finely sliced
- 2 pieces of fish cake, sliced
- 12 prawns
- 2 eggs, beaten
- oil
- 2 tbsps soy sauce
- 3 tbsps mirin
- 2 tbsps coriander, chopped
- chilli oil
- 2 spring onions, finely sliced
- 2 tbsps shredded red ginger

These home-made spring rolls are enormous but so good! Roughly 2 a person is filling
- 3 shiitake mushrooms
- 1/2 tbsp vegetable/groundnut oil (plus extra for frying)
- 112 g (4 oz) minced pork
- 1/2 tsp dark soy sauce
- 50 g canned bamboo shoots, julienned
- 50 g prawns, chopped
- 112 g (4 oz) beansprouts, trimmed and roughly chopped
- 1/2 tbsp spring onions, finely chopped
- 10 spring roll wrappers
- 1 egg white, lightly beaten

This is a quick stir fry that's normally served as a street food in Thailand
- 175 g noodles
- 1 tbsp chopped coriander
- 1/2 red chilli, deseeded and finely chopped
- oil
- 125 g prawns
- 3 shallots, finely chopped
- 1 egg, beaten
- 1/2 tbsp light brown sugar
- 1/2 tbsp oyster sauce
- 1/2 tbsp fish sauce
- juice of 1/2 a lime
- 1 tbsp sweet chilli sauce
- 125 g beansprouts
- 2 spring onions, sliced
Chicken Chow Mein

Drop the noodles into a large pan of boiling water, ensure heat is turned off, and leave for 4 minutes
