- 1 135g individual camembert
- 1 320g packet of ready rolled puff pastry
- For the chutney:
- Tomato chutney
- 2 medium tomatoes
- 1/2 a red onion
- 2 cloves garlic
- 1/2 tea spoon chilli flakes
- 2 tea spoons balsamic vinegar
- 1 tea spoon fresh lemon thyme
Zucchini Paneer ( Courgettes and Indian cottage cheese Curry)

Indian cottage cheese better known as Paneer is a hot favourite among the vegetarian community
- 2 Medium Zucchini (Courgettes/Summer squash) (Washed)
- 200gm Paneer (Indian cottage cheese)
- 1 pc Tomato (big)
- 2 or 3 Green Chillies
- 1 tablespoons of Ginger Paste
- 5-6 tablespoons of Oil : Sunflower oil
- Spices:
- Cummin Whole(Jeera): 1/4 teaspoon
- Cinnamon (Darchini): 1/4 of a stick
- Cardamom (Elaichi): 3 small one
- Clove (Labongo/laung): 3
- Garam Masala: ½ teaspoon
- Cumin powder (Jeera): 1 table-spoon
- Turmeric powder (Halud/Haldi): 1 tea-spoon
- Sugar: 1 tea-spoon
- Water
- Salt to Taste

First, mix together the shredded cheese, half of the salt and the softened butter
- 8oz shredded cheddar cheese (I used sharp aged white cheddar)
- 1 cup all-purpose flour
- 4 tbs unsalted butter, softened

Line two 10cm tartlet tins with short crust pastry and bake blind in a medium oven for 10 minutes
- Tart:
- Short crust pastry
- 4 asparagus spears
- 4 turned carrots
- 2 turned courgettes
- 8 mange-tout
- 4 black olives
- 2 spears baby corn
- 2 cherry tomatoes
- 80g sautéed spinach
- 120-160g log of goats' cheese
- Garnish:
- 200g wild mushrooms
- 100ml beurre blanc sauce
- 50ml red pepper coulis
- 4tsp freshly chopped parsley
- Chervil to garnish ( or Fennel Tops)
- Red Pepper Coulis:
- 2 tsp. olive oil
- 1 diced shallot
- 2 roasted and peeled red pepper
- 2 cloves minced garlic
- 1 cup V-8 Juice
- Salt and pepper to taste
- Put all the ingredients in a blender and puree.
- Beurre Blanc Sauce:
- Preparation Time: 30mins
- 1/3 cup lemon juice (Fresh, or 2 1/2 tblsp concentrated)
- 1 shallots peeled and chopped
- 170gms butter cut into 1-inch sticks
- Salt and white pepper

- 1/2 Red Onion, finely diced (you can use white onion or spring onion if you prefer)
- 3 tbsp Mayonnaise
- 1 tbsp Tomato Sauce
- Salt
- Pepper
- Malt Vinegar
- Grated Cheese (Cheddar or Red Leicester are good)
- Bread, I usually use Ciabatta or English Muffins. You can use any rolls or even sliced bread.
