- 2 c apple cider,
- 1 1/2 c honey,
- 1 tsp cinnamon,
- 1/2 tsp ground cloves,

- 115g self raising (approx 1 cup plain flour + 2 tsp baking baking powder), sifted
- a pinch of salt
- 60g butter, softened
- 60g sugar
- 1 egg

- 2 small Granny Smith apples, peeled and sliced thinly

- 250g Mascarpone (room temperature)
- 1tsp Vanilla Bean Paste
- 250g Icing Sugar
- Walnuts and dried apple for decoration
