Apple, Walnut and Cinnamon Cake

A great birthday cake I made for my OH with lots of autumn flavours and extremely rich and bad for you with mascarpone frosting!!

Ingredients

  • Cake
  • 190g Plain Flour
  • 50g Oats
  • 1tsp Bicarbonate of Soda
  • 1tsp Cinnamon
  • 1tsp All Spice
  • 1/2tsp Freshly Grated Nutmeg
  • 175g Caster Sugar
  • Pinch of Salt
  • 175ml Sunflower Oil (or other flavourless oil)
  • 2 Eggs
  • 1tsp Vanilla Bean Paste
  • 2 Cooking Apples, peeled and finely chopped
  • 50g Walnuts (roughly chopped)
  • Frosting
  • 125g Butter (room temperature)
  • 250g Mascarpone (room temperature)
  • 1tsp Vanilla Bean Paste
  • 250g Icing Sugar
  • Walnuts and dried apple for decoration

Preparation

Step 1

Preheat the oven to 180C/350F and line and grease a 23cm cake tin.

Step 2

Mix the flour, oats, bicarbonate of soda, spices, sugar and salt together in a large mixing bowl.

Step 3

In another bowl, mix the oil, eggs and vanilla.

Step 4

Whisk together the wet and dry ingredients to create a smooth batter.

Step 5

Add the chopped apple and walnuts to the mixture, then pour into your prepared cake tin.

Step 6

Bake the cake for 45 to 50 minutes or until it is dark bronze and firm in the centre.

Step 7

Leave to cool completely in the cake tin before turning out to ice.

Step 8

To make the frosting, whisk the butter until it is light in colour and fluffy.

Step 9

Add the mascarpone and vanilla and beat until well combined. Add the icing sugar and beat into a light, mousse like frosting.

Step 10

Spread the icing all over the cooled cake and decorate with dried apples and walnut pieces.

Make sure your butter and mascarpone are at room temperature before you use them, or your frosting will have lumps in it!! :(
