Asparagus and Potato Salad with Duck in Parma Ham

Put the cooked potato and asparagus into a bowl and season with salt and pepper
- Salad:
- ½ large potato (peeled, cubed and boiled until tender)
- Asparagus
- Salt and freshly ground black pepper
- Dressing:
- 55g goats cheese
- 2 tablespoons double cream
- 2 tablespoons finely chopped basil
- Duck:
- ½ duck breast (skin removed and meat sliced into 4 strips)
- 2 slices of parma ham (sliced lengthwise)
- 1 tablespoon olive oil
Goat's Cheese Tartlets

Line two 10cm tartlet tins with short crust pastry and bake blind in a medium oven for 10 minutes
- Tart:
- Short crust pastry
- 4 asparagus spears
- 4 turned carrots
- 2 turned courgettes
- 8 mange-tout
- 4 black olives
- 2 spears baby corn
- 2 cherry tomatoes
- 80g sautéed spinach
- 120-160g log of goats' cheese
- Garnish:
- 200g wild mushrooms
- 100ml beurre blanc sauce
- 50ml red pepper coulis
- 4tsp freshly chopped parsley
- Chervil to garnish ( or Fennel Tops)
- Red Pepper Coulis:
- 2 tsp. olive oil
- 1 diced shallot
- 2 roasted and peeled red pepper
- 2 cloves minced garlic
- 1 cup V-8 Juice
- Salt and pepper to taste
- Put all the ingredients in a blender and puree.
- Beurre Blanc Sauce:
- Preparation Time: 30mins
- 1/3 cup lemon juice (Fresh, or 2 1/2 tblsp concentrated)
- 1 shallots peeled and chopped
- 170gms butter cut into 1-inch sticks
- Salt and white pepper
Sea Bream with Lemon Roasted Asparagus and New Potatoes

Boil in the potatoes and garlic in salted water for 15 minutes or until tender
- For the fish:
- 2 Sea Bream fillets, pin-boned
- 2 discs lemon parsley butter (Recipes/Extras)

- For the fish
- •100g Cod Fillet (Skinless & Boneless)
- •30g Total 0% Fat Free Authentic Greek Yoghurt
- •0.2 tbsp. Mild & Light Olive Oil (I used Filippo Berio) to grease the dish
- •1/2 Wholemeal Bread (I used Warburtons)

Cook asparagus in boiling water for 5 minutes, until tender-crisp
- 15 asparagus
- Some lambs lettuce
- 8 cooked prawns
- 1 tablespoon pecans
- 1 ripe avocado
