Green Asparagus Charlotte

  • 1 jar of mini green asparagus (100 g)
  • 3 slices of bread
  • 10 cl of single cream
  • 1 egg
  • 1 tablespoon chopped chives
  • 1 teaspoon cornstarch
  • 2 tablespoons of breadcrumbs
  • salt and pepper

Step 1

Brown the slices of bread in a pan with some butter. Cut into slices, the height of the ramekins in which you will make the charlottes. Place the pieces of bread vertically around the edge and the ramekins.

Step 2

Blend the asparagus (keep a few asparagus for decoration) with the egg, cream, chives, bread crumbs and cornstarch. Salt and pepper. Pour the mixture into the ramekins.

Step 3

Bake for half an hour in a water bath in the oven at gas mark 4 / 180°C.
