Liver and Red Pepper

Ingredients

  • 3tbsp groundnut oil
  • ~400g liver
  • 2 leeks
  • 2 red pepper
  • 2 red chilli
  • 2tsp dried oregano
  • 2 garlic cloves
  • 200g spring greens
  • 1 orange
  • tbsp medium dry sherry
  • seasoning

Preparation

Step 1

Cut liver into strips.
Diagonally slice the leeks.
Cut pepper into rough squares.
Finely chop the chillies.
Crush the garlic.
Thinly slice the spring greens.
Grate the zest of the orange.
Squeeze the juice out of the orange.

Step 2

Heat 1tbsp oil in large non-stick frying pan.
Add liver and stir fry on moderately high heat for 3 mins. (liver should be light brown but not rubbery)
Tip liver onto a plate.
Leave juices in the pan.

Step 3

Add remaining oil to pan.
Tip in leek, pepper and chilli.
Stir fry on high heat for 2 mins.
Add oregano, garlic and greens.
Stir fry for 30 seconds until greens have just wilted and are bright green.

Step 4

Return liver to pan.
Add orange zest and juice, sherry and seasoning.
Toss everything on high heat.
Serve immediately.

Cook as an evening meal for 2 and take the other half into work for lunch the next day!
