Step 1

The night before soak the dried mushrooms in milk.

Step 2

Finely chop the livers and fat.

Step 3

Mix thoroughly with the eggs and the milk that was used to soak the mushrooms.

Step 4

Add thyme, bay leaves, salt, pepper and spices.

Step 5

Put into terrines which have been sterilised in boiling water for three hours.
