Whole Roast Jazzy Potatoes with Sea Bass, Tomatoes and Thyme

Heat the oven to 200°C. Put the potatoes, tomatoes, garlic, shallots, and thyme in an oven tray
- 300g Jazzy potatoes
- 4 large tomatoes, halved
- 4 garlic cloves, skin on
- Small bunch of lemon thyme
- 6 shallots, peeled
- 2 tbsp olive oil
- 2 - 4 sea bass fillets, depending on how hungry you are (or any white fish such as Coley, though they may need to be cooked for slightly longer. The fish is cooked when it’s opaque and flakes easily.)

Pressure cook/boil 1 cup of thoor dal with 2 cups of water
- Thoor Dal: 1 Cup
- Tomatoes (cut into pieces): 4 Qty
- Mustard: 1 spoon
- Urd Dal: 1 spoon
- Chana Dal: 1 spoon
- Curry Leaves: 10
- Green chillies (vertically chopped) : 3
- Turmeric: 1 pinch
- Oil for seasoning : 3 teaspoons.
- Salt as per your taste

Preheat the oven to 400 degrees F (200 degrees C)
- 50 vine-ripened cherry tomatoes
- 2 tbsp vegetable oil
- Large pinch of sea salt
- Freshly ground black pepper
- 1 squidge of honey or 1 tbsp superfine sugar
- Handful of bread crumbs
- All-purpose flour, for dusting
- 1 lb 2oz/500g homemade or store-bought puff pastry
- 1 egg, lightly beaten

- 8in (20cm) ovenproof skillet. If you don't have one, cook the tomatoes in a skillet, then transfer to an 8in (20cm) cake pan for baking
