A simple to make, yet delicious tomato and mustard tart

  • 1 ready made pastry
  • 3 large beef tomatoes (or regular tomatoes work too)
  • 2 tbs dijon mustard
  • Ham (optional)
  • Hard cheese (i used French comté, but a mature cheddar is fine)
  • Grated cheese
  • Garlic powder
  • Origano
  • Salt & pepper

Prepare the dough. Blend the arugula with olive oil and crushed garlic clove and a pinch of salt

  • For the dough:
  • 30 g rocket
  • 1 clove of garlic
  • 5 cl of olive oil
  • 70 g flour
  • 10 g cornflour
  • 3 g yeast
  • For the cream:
  • 120 g courgette, cooked and mixed
  • 120 g of yoghurt sheep's milk
  • 1 egg
  • 1 egg yolk
  • 1 pinch of cornstarch
  • For the filling:
  • 1 fig
  • ½ melon
  • 4 slices of smoked ham
  • 2 cl of reduced balsamic vinegar
  • 15 g rocket
  • olive oil
  • salt
  • Espelette pepper

Cook the pastry, empty, in a flan tin with weights, for about 30 minutes

  • 1 sweet pastry or puff pastry
  • Crème pâtissière (custard cream):
  • - 1/2 litre of milk, boiling hot
  • - 80 g sugar
  • - 4 yolks
  • - 45 g cornstarch
  • - 1/2 vanilla bean or vanilla extract
  • - 20 g butter
  • - 500 g strawberries
  • - 1 small bunch mint leaves
  • - 30g icing sugar
