King Prawn and Chilli Linguini

Combine all ingredients in a bowl and marinade for 8 hours
- 1 pack cooked king prawns
- 4/5 chopped spring onions
- 1 red chilli, deseeded and finely chopped
- 1/2 jar sundried tomatoes + some of the oil from the jar
- Whatever tomatoes you have which need using up, chopped
- 150g Linguini or Spaghetti
Johns Prawn Cocktail Sauce

- 4 Tbsp Salad Cream
- 1 Tbsp Tomato Sauce
- Dash of Lemon Juice
- Dash of Vinegar

- 2 x tablespoon of mayonnaise

- 3 tbsp olive oil
- 1 onion finely chopped
- 1 red pepper sliced thinly
- 1 garlic clove crushed
- 225 gm long grain white rice
- 700 ml fish,chicken or veg stock
- 1 bay leaf
- salt and pepper
- 400 gm peeled cooked prawns
- To garnish – a handful of whole cooked prawns
- lemon wedges
- Greek black olives
- Serve with Pecorino cheese to grate over
- Cubes of Greek feta cheese

- 1 Onion, finely diced
- 2 Carrots, finely diced
