Thai Massaman Fish Curry

Heat the oil and soften the onion, garlic, chilli and ginger for 2 minutes
- 2 fillets white fish
- 100g prawns
- 1-2 medium potatoes, diced
- 400ml coconut milk
- Half red pepper, sliced
- 1 medium tomato, sliced
- 1 tbsp sesame oil
- 1 small onion, sliced
- 1 thumb sized piece of ginger, grated
- 4 cloves garlic, crushed
- 1 red chilli, sliced
- 150ml fish stock
- 1 stalk lemongrass, grated
- 3 bay leaves
- 1 tsp turmeric
- 1 tsp ground coriander
- 1 tsp cumin seeds
- 1/2 tsp white pepper
- 5 cardamom pods, split open
- Juice of 1/2 a lime
- 2 tbsp fish sauce
- 1 tbsp soft brown sugar
Flaked Fish Curry with Tumeric and Cardamom

Gluten free, dairy free
- 2 tbsp vegetable oil
- 1 medium onion, chopped
- 1 clove of garlic, crushed and chopped
- 1 knob fresh ginger, grated
- 2 tsp cumin
- 2 tsp coriander (ground)
- 1 tsp cardamom
- 1/2 tsp tumeric
- 1/2 tsp salt
- 2 fresh green chilies, chopped
- Small bunch of fresh coriander, chopped
- 1 tbsp lemon juice
- 2 x 400g chopped tomatoes
- 450g cod fillets or alternative white fish (coley, pollock etc)
Duo of salmon and swordfish curry

Cut the swordfish and salmon into large chunks
- 500 g of swordfish (about 2 slices)
- 500 g salmon (2 thick pieces)
- 3 apples
- 1 mango
- 1 onion
- 4 cloves of garlic
- 50 g of tomato concentrate
- 1 tbsp oil
- 10 g butter
- 1 tsp of coriander powder
- 3 tsp Indian curry
- 5 tsp fish stock diluted in 500 ml water
- 4 tsp coconut palm sugar diluted in 200 ml water
- 1 tsp of thyme leaves
- 1 tsp of cinnamon powder
- Salt and pepper
