- 2 tablespoons Green curry paste
- 1 tablespoon Palm sugar
- 1-2 stalks Thai Lemongrass
- 6-8 Fresh Kaffir lime leaves, torn into pieces
- 200g Thai Eggplant
- 400ml (1 can) Coconut milk
- 2 tablespoon of Thai fish sauce
- Small handful of Thai Coriander, roughly chopped
- Thai Basil and Thai Red Chillies (optional)

Slice finely the green onion
- 3 cups chicken stock
- 250g peeled prawns,
- 2 cloves garlic, crushed
- 5 leaves of bergamot,
- 3 slices of galangal,
- ¼ cup fish sauce (Nam Pla)
- 2 stalks lemongrass, chopped 2 3 cm approx.,
- 2 green onions,
- 5 Thai green chilies to taste (depending on your taste)

Thai Massaman Fish Curry

Heat the oil and soften the onion, garlic, chilli and ginger for 2 minutes
- 2 fillets white fish
- 100g prawns
- 1-2 medium potatoes, diced
- 400ml coconut milk
- Half red pepper, sliced
- 1 medium tomato, sliced
- 1 tbsp sesame oil
- 1 small onion, sliced
- 1 thumb sized piece of ginger, grated
- 4 cloves garlic, crushed
- 1 red chilli, sliced
- 150ml fish stock
- 1 stalk lemongrass, grated
- 3 bay leaves
- 1 tsp turmeric
- 1 tsp ground coriander
- 1 tsp cumin seeds
- 1/2 tsp white pepper
- 5 cardamom pods, split open
- Juice of 1/2 a lime
- 2 tbsp fish sauce

A wonderfully warming noodle soup, with fragrant spices and a little heat all balanced with rich coconut milk
- 1 good knob fresh root ginger, peeled and roughly chopped
- 1-2 red chillies, seeds removed (optional), roughly chopped
- 1-2 stalks lemongrass, tough outer layers removed, roughly chopped
- 2-3 garlic cloves, peeled
- 1 handful fresh coriander, a few sprigs reserved and chopped
- a glug or two vegetable oil
- 1 tbsp coriander seeds
- 1-2 pinches ground turmeric
- small jug vegetable stock
- a couple of handfuls rice noodles
- 1 x 400ml/14fl oz can coconut milk
- 1 large handful raw, peeled tiger prawns (the shells and heads can be reserved for making stock in another recipe)
- a few splashes Thai fish sauce, to taste
