Kanda Poha - Bombay Style

Kanda means onion and that is what makes poha special in taste
- Flattened rice : 2 cups /150 grams
- Onion : 1 large (finely chopped)
- Peas 1/8 cup
- Green Chilies : 2 or to your spice tolerance (Slit lengthwise)
- Peanuts: 1/4 cup
- Asafoetida Powder: 1/2 teaspoon
- Mustard Seeds : 1 teaspoon
- Turmeric Powder: 1/2 teaspoon
- Sugar: 1/4 tsp
- Curry Leaves: few
- Cilantro: · Few sprigs
- Cooking Oil : 2 tsp (I used coconut oil)
- Salt to taste
- Lemon juice1 tablespoon
Malai Chicken (Chicken in coconut milk)

Malai chicken is a main dish which is favourite among different parts of India
- 1 kg Chicken (washed and medium pcs)
- 200 ml Coconut Milk
- 3 or 4 Green Chillies
- 2 tablespoons of Ginger Garlic Paste
- 1 Tomato
- 4-6 tablespoons of Oil : Mustard (preferred)/Sunflower oil
- Medium Size Onion: 2 nos
- Spices:
- Cummin Whole(Jeera): 1/4 teaspoon
- Cinnamon (Darchini): 1/4 of a stick
- Cardamom (Elaichi): 3 small one
- Clove (Labongo/laung): 3
- Black pepper powder (Golmorich) : 1/4 teaspoon
- Garam Masala: ½ teaspoon
- Cumin powder (Jeera): 1 table-spoon
- Turmeric powder (Halud/Haldi): 1 tea-spoon
- Sugar: 1 tea-spoon
- Water
- Salt to Taste

- 1 400g can chickpeas
- Bunch of Greek basil – though you could use ordinary
- Glugs of Olive oil
- 1 garlic clove chopped
- 75 gm pine nuts – toasted lightly in a dry frying pan
- Good handful of grated pecorino
- 1 red chilli deseeded and chopped

- 300g block Careme Dark Chocolate Shortcrust Pastry (see notes)
- 300ml thickened cream
- 150ml pure (thin) cream
- 2 tablespoons caster sugar
- 200g dark chocolate, finely chopped
- 100g milk chocolate, finely chopped
- Seeds of 10 cardamom pods
- 1/2 teaspoon chilli powder

- 2 tbsp olive oil
- 700g minced beef
- 1 large onion, peeled and roughly chopped
- 5 cloves of garlic, peeled and crushed
- 2 red or yellow peppers, deseeded and roughly chopped
- 3 red or green chillies, deseeded (optional) and finely chopped
- 2 x 400g tins of chopped tomatoes
- Salt and freshly ground black pepper
- 400g tin of kidney beans, drained

- 450 grams Minced Beef 1 Diced Onion
- 1 Can Kidney Beans 1 Can Oxtail Soup
- 1 Green Pepper (optional) Beef Stock Cube
- Garlic (optional) Oil
- Chilli Powder, Paprika, Hot Chilli Sauce (Piri Piri etc), Fresh Chillies.
- The above seasoning depends on how hot you like your chilli; I use the powders more for colouring & tend to use a hot sauce or fresh chillies for heat. If you don’t like it too hot try a couple of teaspoons of chilli powder.

- 1 tbsp oil
- 450g pork shoulder, cut into chunks
- 1 large onion, chopped
- 2 garlic cloves, peeled and crushed
- 1 medium apple, peeled, cored and cut into chunks
- 2 medium carrots, sliced
- 200g swede, cubed
- 420g mixed beans in chilli sauce
- 400ml hot vegetable stock

- 2 garlic cloves
- 200g kidney beans
- 400g chopped tomatoes
- 1 tsp coriander
- 3 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 2-3 tbsp tomato purée
- Salt n pepper to taste
