Heat the oil and cook the onion and chilli for 5 minutes until softened
- 1 tbsp oil
- 1 large onion
- 1 red chilli
- 2 garlic cloves
- ½ tsp mild chilli powder
- 410g tin of black-eyed beans
- 410g tin of kidney beans
- 2 x 400g tin of chopped tomatoes
- 1 tbsp tomato ketchup
- To serve:
- 12 taco shells
- 6 tbsp grated cheddar
- 6 tbsp sour cream
- 1 lime cut into wedges

Place all the paste ingredients in a food processor and puree
- Paste:
- 3 tbsp olive oil
- 1 red onion chopped
- 3 garlic cloves
- 3 cm fresh ginger grated
- 1 tsp cumin
- 1 tbsp paprika

- 1 tsp mild chilli powder

- 6 dry apricots halved

- 130g of pancetta
- 2 large onions peeled and chopped
