Grace's Special Rice


An interesting compilation of vegetables and meats, making it somewhat of a special fried rice with an Indian flair

  • 3-4 cups of long grain rice
  • 3 mushrooms
  • 2 asparagus
  • 500g diced chicken
  • 250g turkey minced
  • 2 carrots chopped
  • 2 okras chopped
  • 1 tsp thyme
  • Pinch of turmeric
  • Dash of mustard powder
  • 1 tsp chopped garlic
  • 2 tbsp curry powder
  • ½ large onion sliced
  • 2 tbsp olive oil
  • 700ml chicken stock
  • Chilli chopped finely

Step 1

Fry onion, garlic, and chilli in a medium sized pot till translucent

Step 2

Add beef sausage, fry till brown then add chicken wait till all is white then add the mince.

Step 3

Add chicken stock and rice

Step 4

Simmer for 1o minutes

Step 5

Add peppers, mushrooms, okra, and carrots and then simmer for around 10 minutes

Step 6

Serve with a sprig of fresh parsley.

Use only one pan so that the flavours can work better together.
