Ingredients
- 50g light mayonnaise
- 35g mango chutney
- 1/2 teaspoon curry powder
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 250g skinless/boneless chicken breast fillets
- sprinkle of raisins
- sprinkle of almonds

Preparation
Step 1
Bring a pot of water to the boil, then place the chicken fillets in the water, turn off the heat and cover for 15 minutes.
Step 2
Remove the poached chicken and dice, leaving to cool.
Step 3
Combine the mayo, chutney, curry powder, lemon juice, salt, raisons and almonds in a mixing bowl with the cooled chicken and mix well.
Step 4
Serve between two slices of fresh wholemeal bread.
Poaching the chicken fillets is healthier and locks in moisture, leaving them succulent.
