Chicken A La King

Ingredients
- 2 tbsp butter
- 1 onion, finely chopped
- 100g button mushrooms
- 450g chicken fillets, cut into cubes
- 1 red chilli, finely chopped
- seasoning
- 4 tbsp sherry
- 180ml chicken stock
- 50ml cream

Preparation
Step 1
Melt the butter in a large pan
Saute the onion until just tender
Add the mushrooms and cook without colouring
Once cooked, remove with a slotted spoon and set aside
Add the chicken and chilli to the pan and cook until the chicken is golden
Add the sherry and stock and simmer over a low heat until the chicken is cooked
Add the onion and mushrooms, stir well and bring to the boil
Remove from the heat and finish off by stirring in the cream
Serve immediately
