Finely chop the shallots. Peel the mangoes and remove the stone. Cut into thick strips and save the juice.
Melt the shallots and seize the duck breasts over high heat. Season the duck breasts, then coat with honey. Then fry to caramelise.
Deglaze the pan with vinegar and the mango juice.
Fry the mango in the cooking juices and serve immediately.
