Vegetarian Cheeseburgers with Chips

  • Jacket chips:
  • 2lb/1kg baking potatoes
  • 3 tbsp oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp chilli powder
  • Cheeseburgers:
  • 13oz/400g tin of red kidney beans
  • 1 small onion finely chopped
  • 3½oz/100g cheddar cheese grated
  • 3½oz/100g breadcrumbs
  • 1 egg
  • plain flour for dusting
  • 1 tbsp oil

Step 1

Heat the oven to 220ºc / 425ºf / gas mark 7

Step 2

Scrub the potatoes and cut into small wedges

Step 3

Pat dry on kitchen paper and put in a roasting tin

Step 4

Drizzle with oil and sprinkle with spices

Step 5

Roast in the oven for 30 minutes, turning once or twice

Step 6

Put the beans in a large bowl and mash with a fork

Step 7

Add the onion, cheese, breadcrumbs and egg and mix to a smooth paste

Step 8

Put a little flour on your hands, shape the mixture into 4 burgers

Step 9

Heat the oil in a frying pan and fry the burgers gently for 8-10 minutes, turning once

Step 10

Serve with the jacket chips
