Caramel chip cookies
- 125 g butter
- 3/4 cup brown sugar
- 1 egg
- 1 1/2 cups self raising flour
- 375 g caramel chips

Preheat oven to 180°C/ 160°C fan forced. Grease and line 2 baking trays with non-stick baking paper.
Place the butter, brown sugar and egg in the bowl of an electric mixer, beat until mixture is pale and creamy.
Transfer to a large bowl. Sift in the flour. Add caramel chips. Mix until well combined.
Place level teaspoons of mixture, about 4cm apart, on prepared trays. Bake in oven for 15 minutes or until golden. Set aside on the trays for 5 minutes to cool before transferring to a wire rack to cool completely.
