In a pan, fry the onion, previously cut into small pieces, in a liittle oil and butter

- 1 red onion

- A little butter

- 3 tbsp white wine

- 3 carrots, 2 peppers, 1 onion, 1/2 a cucumber, 1 bag of new potatoes, 1 tin of sweetcorn, 6 rashers of bacon, 2 chicken breast fillets, 3 table spoons of light mayonnaise, a sprinkle of rosemary, mint, mixed herbs and cheese.
Carrot Rosemary Potato Latkes

They are made from shredded potatos, carrots, eggs, onions and salt
- 3 large potatoes
- 2 large carrots
- 3 eggs
- 3 teaspoons whole wheat flour or Matzo meal (half breadcrumb and half flour)
- 4 sprigs of fresh rosemary, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Oil

Yummy moist carrot cupcakes complemented by cream cheese icing
- 100g brown caster sugar
- 75g brown muscovado sugar
- 100g wholemeal self-raising flour
- 100g self-raising flour
- 1 tsp bicarbonate of soda
- 2 tsp mixed spice
- zest of 1 orange or small pink grapefruit
- 2 eggs
- 150ml sunflower oil
- 200g grated carrots (3 small)
- For the icing
- 50g butter, softened
- 150g soft cheese
- 50g icing sugar, sifted
- 1 tsp vanilla extract

Cut the woody core from the cabbage quarters and then shred them as finely as you have the patience for

- 1 1/3 cup grated carrot
- 2 eggs
- 100g sugar
- 1/2 tp vanilla extract
- 160ml oil

- 1/4 tp salt

- 2 tsp cumin seeds
- pinch chilli flakes
- 2 tbsp oil
- 600g grated carrot
- 140g split red lentils
- 1l vegetable stock
- 125ml milk (coconut milk for richer flavour)
- To serve:
- plain yoghurt
- naan bread

- 100g corn oil

- 2-3 grated carrots
- A handful of raisins
- A handful of walnuts (broken in pieces)
- 1 sachet of baking soda
- Pie tin of 26-28cm diameter.

Melt the margarine in a pan and add the carrots, potato, onion, celery and garlic
- 25g/1oz margarine
- 500g/1lb carrots sliced
- 1 medium potato chopped
- 1 onion chopped
- 1 stick celery chopped
- 1 clove garlic chopped
- 900ml/1½ pints water
- 1 tsp ground coriander
- pinch of sugar
- generous handful of fresh coriander roughly chopped (about 2 tbsp)
