- 3 carrots, 2 peppers, 1 onion, 1/2 a cucumber, 1 bag of new potatoes, 1 tin of sweetcorn, 6 rashers of bacon, 2 chicken breast fillets, 3 table spoons of light mayonnaise, a sprinkle of rosemary, mint, mixed herbs and cheese.

- 140g split red lentils
- 1l vegetable stock
- 125ml milk (coconut milk for richer flavour)
- To serve:
- plain yoghurt
- naan bread
Carrot Rosemary Potato Latkes

- 2 large carrots
- 3 eggs
- 3 teaspoons whole wheat flour or Matzo meal (half breadcrumb and half flour)

- 75g brown muscovado sugar
- 100g wholemeal self-raising flour
- 100g self-raising flour

- 25g/1oz margarine
- 500g/1lb carrots sliced
- 1 medium potato chopped
- 1 onion chopped
- 1 stick celery chopped
- 1 clove garlic chopped
- 900ml/1½ pints water
- 1 tsp ground coriander
- pinch of sugar
- generous handful of fresh coriander roughly chopped (about 2 tbsp)
