- 1 litre of water
- Vegetable oil
- To Serve:
- Corn chips 175g (plain or cheesy)
- 250g grated tasty cheese (cheddar)

Preheat oven to 200°C. Heat oil in a large frying pan over medium-high heat
- 1 tablespoon olive oil
- 1 small brown onion, finely chopped
- 1 garlic clove, crushed
- 500g lean beef mince
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/4 teaspoon chilli powder
- 400g can diced tomatoes
- 1 red capsicum, chopped
- 2 tablespoons tomato paste
- 1/3 cup beef stock
- 300g can red kidney beans, drained, rinsed
- 1/2 cup coriander leaves, chopped
- 8 flour tortillas (see note)
- 3/4 cup grated cheddar cheese
- sour cream and salad leaves, to serve
