Eggplant & Feta Cheese Vegetable Salad

Grilled eggplant, roasted peppers, tomatoes, carrots , feta cheese and fresh parsley salad
- 1 grilled eggplant, diced
- 1 large tomato, chopped
- 2 roasted peppers, thinly sliced
- 1 carrot, grated
- 150g/5oz feta cheese, crumbled
- a bunch of fresh parsley, chopped
- For the dressing:
- 3-4 tbsp olive oil
- 2tbsp lemon juice
- salt & pepper

Heat olive oil in a saucepan, add the onions
- 200 g onions, thinly sliced
- 1 tbsp olive oil
- 400 g tomatoes, peeled, chopped
- 500 g eggplant, cubed
- 2 celery stalks
- 6 olives
- 1 tbsp capers
- 2 tbsp tomato paste
- 125 ml (½ cup) water
