- 3 tbsp white wine vinegar
- 6 peppercorns
- 1 dried bay leaf
- 2 eggs, yolks only
- 125g/4oz butter
- lemon juice, salt and pepper to taste

- Ingredients for salmon:
- 4 fillets of salmon
- Salt & Pepper
- Ingredients for potatoes:
- 4 lbs. kerr pinks, washed, peeled, and quartered
- Salt & Pepper
- 2 heaping tablespoons of Sour Cream
- 2 tablespoons of Real Butter
- Ingredients for Creamed Spinach:
- 1 bag fresh spinach
- Salt & pepper
- 1 heaping tablespoon Philadelphia garlic and herb cream cheese
- 2 tablespoons real butter
- Ingredients Hollaindaise sauce:
- 3 large egg yolks
- 1 tablespoon water
- 250g unsalted butter, melted
- Salt & pepper
- Juice of 1/2 lemon

Bring a deep saucepan of water to the boil (at least 2 litres) and add the vinegar
- 3 tbsp white wine vinegar
- 4 large free range eggs
- 2 toasting muffins
- 1 batch hot hollandaise sauce (see 'Goes well with' below)
- 4 slices Parma ham (or Serrano or Bayonne or Salmon)
